Peasant cake from Lombardy

200g stale bread
750ml milk
100g Amaretti
100g dry biscuits
50g candied orange peel
125g cocoa powder
50g plain chocolate
50g butter
50g raisins
30g pine nuts
Grated lemon zest
2 eggs
1 teaspoon ground cinnamon
pinch of salt

Finely chop the bread and place in a lrge bowl. Warm the milk and mix in the butter, cocoa powder, chocolate, Amaretti, crushed biscuits and sugar. Mix into the bread and allow to rest for 3 or 4 hours.

Soak the raisins to soften them. Knead the bread mixture until smooth. Add the eggs, pine nuts, candied peel, squeezed raisins, lemon zest, cinnamon and a pinch of salt. Mix well and bake in a pre-heated oven (180˚) for 1hr 30mins.
