Ingredients:
4 eggs,
150 g of sugar,
0,75 L whipping cream,
1 jar of cream of chestnuts,
pieces of marrons glaces
Whip egg yolks with sugar; add 0,5 L whipping cream, slightly heated; cook on low flame “a bagnomaria” (put container with mix in a larger one with water that must boil slowly) until it becomes dense (it’s done if by dipping a spoon in, it comes out lightly covered). Let cool.
In a bowl containing the chestnut cream, add the cool mix.Whip the remaining cream and add to the rest of the mix. Pour everything into a bowl covered in silver foil and put in freezer for at least 6 hours. The marrons glaces can be put on the bottom of the bowl or used as final garnish. Enjoy!
